No meal is said to be concluded without treating the sweet tooth. Here is one such delicious dessert to tickle your taste buds. Balu Shahi or Badusha is mostly served in weddings and big occasions. So i was always under the impression that it can only be prepared by trained cooks (halwai) .
But here i am with this mouthwatering dessert dished out from my kitchen !
Believe me it is very easy to make and the taste takes you back to those sweet memories
Ingredients :
All purpose flour / Maida - 2 Cups
Ghee or butter - 4 to 5 sp
Curd - 3/4 cup
Sugar - 2 cups
Baking powder - 1/4 sp
Cooking soda - a pinch
Oil for frying
Procedure :
1. Take maida in a mixing bowl. Add baking powder and cooking soda. You can even sieve them together to that they get mixed evenly. Add ghee and mix well
3. Let it rest for 20 min. covered. In the meanwhile we will prepare the sugar syrup. Take sugar, add little bit of water and bring it to a one string consistency. Add 1 spoon of lemon juice at the end (this will prevent the sugar syrup from solidifying after cooling )
4. Now take a lemon size dough and make it into a round shape and press it. Make a dent at the center. Let the edges be rough and not a smooth one. What it does is, when we put them into the sugar syrup, the syrup gets absorbed properly. Keep them ready on a tray
5. Now fry them in medium hot oil( not too hot oil, them may break) so that it gets cooked properly inside. Fry until you get nice brown color. They get puffed up. If the dough is perfect, they become double in size after frying
6. Now its time to put them into the sugar syrup
7. Take them out once the sugar syrup is absorbed nicely. Mouthwatering Badusha is ready!!
